I see what you mean about the sourdough starter needing more time. I let mine sit for about ten days before it was really active and bubbly. The temperature in the room matters a lot so if your kitchen is cooler it might take longer. I use a mix of half whole wheat and half all purpose flour and that seems to help things along. Feeding it every twelve hours once it gets going keeps it happy. I had trouble at first too with it not rising much but once I switched to filtered water it made a big difference. The chlorine in tap water can slow things down. I also keep mine on top of the fridge where it is a bit warmer.
