I finally got around to trying that sourdough starter recipe you sent me a few weeks back. Honestly it turned out way better than I expected the first loaf had a really nice crust and the inside was soft with those little air pockets you want. I think I let it proof a bit too long on the second attempt because it came out a little flat but still tasted great. My kids ate half of it with butter before dinner even started. I keep the starter on my counter now and feed it every morning it is kind of fun to watch it bubble up. My neighbor asked what I was doing and now she wants to try too so I gave her a little bit of the starter. Anyway if you have any tips for shaping the dough before it goes into the Dutch oven I would love to hear them because mine always spreads out more than I think it should. Also I have been meaning to ask you-do you use a banneton or just a bowl with a towel spRSxIkFcHPZ for the final rise? I tried both and the banneton seemed to give it a nicer shape but maybe I just got lucky that day. The whole process is pretty relaxing though. I can see why you are so into it. Let me know if you have any other recipes I should try.

I wanted to follow up on that book you recommended-I finally picked up a copy and I am about halfway through. The writing style is really engaging and I love how the author weaves in those little details about the landscape. It makes me want to visit that region sometime. I have been reading a few chapters each evening and it has become something I really look forward to after work. The main character reminds me a bit of someone I used to know actually. There was this one passage about patience and time that really stuck with me. I ended up reading it twice because it hit so close to home. Anyway I was wondering if you have read anything else by the same author or if this was sort of a one-off recommendation. I might check out their earlier work if it has a similar tone. Also let me know if you want to borrow one of the books I have been talking about. I think you would like the one about the coastal towns. It has a slower pace but the descriptions are beautiful.
